Duck Jambalaya
1 package Zatarain's Jambalaya Mix and

2 1/2 cups of water.
1 cup of celery, diced.
1/2 cup of onion, chopped.
2 medium tomatoes, chopped.
2 pounds of duck, cut into pieces.
2 tablespoons of oil.
1/2 cup of flour0

Dust duck pieces in flour. Brown duck on all sides in hot oil. Set aside. Bring 2-1/2 cups of water to boil. Add Zatarain's Jambalaya Mix. Pour into a deep baking dish. Place duck on top of  rice/water. Sprinkle top with celery, onions, and tomatoes. Cover tightly. Bake in a preheated at 375° F for 1 hour. Remove from oven. Let sit covered 5 minutes. Remove foil and serve.Your choice of wild game or fowl may be substituted for the duck.
